I’m fairly certain these mini cupcakes will be the hit of your Easter Celebration this year! They are easy to make. They are bite-size. They are cute as all get-out. You’ll see how easy they are when you glance at the recipe. I just whipped up the batter from a box of Duncan Hines white cake mix. Super easy! They are baked in a MINI muffin pan to make them “bite-size”. I don’t mind my kiddos eating sugar, but I’ll often split large cupcakes in half so they don’t hit sugar-overload and become too fussy to enjoy the day. Or maybe it’s so I don’t become too fussy and can enjoy my day! HOWEVER… I think it’s fun for kids (and adults!) to have a WHOLE cupcake instead of splitting one. There’s something indulgent about having a cupcake all for yourself. With these mini cupcakes the kids can each have their own and you don’t have to worry about sugar OVERload! {Well… you have to worry less anyhow}. And the adults can feel less guilty about having one all to themselves too. I used SEVERAL boxes of Duncan Hines and made SEVERAL batches of batter.
